Easy Granola Squares

These squares are a nutritious addition to a lunch or after school snack. They are gluten free and taste delicious, with all the goodness of your favorite additions (dates, raisins, nuts, chocolate chips?). These are popular with all ages and last for several days in the fridge or freeze them for snack cravings. No baking required!
Ingredients:

2 1/2 cups rolled oats

1/3 cup nuts (mixture of almonds and cashews), roughly chopped

1/4 cup maple syrup

1/3 cup butter or oil

3 tbsp brown sugar

1 tsp vanilla extract

1 tsp cinnamon

dash nutmeg

1/4 tsp salt

3/4 cup mix-ins (e.g. raisins, coconut and chocolate chips)
Instructions:

Add together rolled oats and nuts mixture. (If desired, roast these together on a baking sheet for 10 mins at 300 deg C to give it extra flavour).

Heat maple syrup, butter or oil, and brown sugar in a saucepan on medium heat for a few minutes, until bubbly. Remove from heat.

To cooled oatmeal /nut mix, add vanilla extract, cinnamon, nutmeg, and salt. Stir in heated mix.

Cool, then add mix-ins.

Mix well and pour into a lightly greased 9 inch square pan. Pat down well. Chill for 2 plus hours. Cut and enjoy!
