Homemade Granola

Ingredients:

  • 4 cups quick oats (or old fashioned)

  • 1- 1 ½ cups finely chopped raw nuts (I used a cup mixture of walnuts, almonds and filberts which gives it lots of flavor)

  • 1 teaspoon fine sea salt 

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon nutmeg

  • 1 Tablespoon ground flax seed

  • 2 T orange rind (optional but good)

  • ½ cup olive oil

  • ½ cup maple syrup (or a little less) plus 1 T honey

  • 1 teaspoon vanilla extract

After cooking and when granola is cool, add in these options:

  • â…” cup dried fruit (I used raisins)

  • 1/3 cup flaked unsweetened coconut

Directions:

  1. Mix and stir together all dry ingredients in a bowl. 

  2. Add in the olive oil, maple syrup, honey and vanilla.  Mix well.

  3. Pat into a large cookie sheet lined with parchment paper.  Bake at 350 degrees for 22-24 minutes or until granola is lightly browned.  Remember to stir up mixture half way to ensure it cooks throughout.  

  4. Enjoy with Greek yogurt, fresh berries, milk or any other combination.  Store in air tight container or bag into the freeze for later.  Yum!
