Ingredients:

-
4 cups quick oats (or old fashioned)
-
1- 1 ½ cups finely chopped raw nuts (I used a cup mixture of walnuts, almonds and filberts which gives it lots of flavor)
-
1 teaspoon fine sea salt
-
1 teaspoon ground cinnamon
-
1/4 teaspoon nutmeg
-
1 Tablespoon ground flax seed
-
2 T orange rind (optional but good)
-
½ cup olive oil
-
½ cup maple syrup (or a little less) plus 1 T honey
-
1 teaspoon vanilla extract

After cooking and when granola is cool, add in these options:
-
â…” cup dried fruit (I used raisins)
-
1/3 cup flaked unsweetened coconut

Directions:

-
Mix and stir together all dry ingredients in a bowl.
-
Add in the olive oil, maple syrup, honey and vanilla. Mix well.
-
Pat into a large cookie sheet lined with parchment paper. Bake at 350 degrees for 22-24 minutes or until granola is lightly browned. Remember to stir up mixture half way to ensure it cooks throughout.
-
Enjoy with Greek yogurt, fresh berries, milk or any other combination. Store in air tight container or bag into the freeze for later. Yum!

Enjoy!
