Black Bean Fajitas

Ingredients:

2 cans (15 oz.) black beans, drained and rinsed

4-5 bell peppers, different colours, cored and sliced into strips

1 large red onion, sliced into half moons

1 Tbsp olive oil

1 Tbsp chili powder
-
1 Tbsp cumin
-
1 tsp garlic powder
-
1 tsp chipotle or cayenne pepper
-
½ teaspoon salt

corn or flour tortillas
-
lime wedges
-
avocados or guacamole

Directions:
​
1. In a large skillet, heat oil over medium heat.
2. Add peppers, onions and spices, cook for about 4 minutes, stirring occasionally.
3. Add black beans and cook until heated, about 3 minutes.
4. Taste and adjust seasonings, to preference.
5. Warm your tortillas in a cast iron skillet on the stove top. Add your fajita mixture, top with avocado chunks or guacamole, and a squeeze of lime.
