Spinach Pie

You can use a ready-made crust or make a healthier almond one as noted below.  I love this tasty pie filled with spinach for an easy lunch or supper (or even cold for breakfast).

Ingredients:

Crust:

  • 2 cups almond flour (I use whole almonds finely crushed in a food processor)

  • 1/2 t salt

  • 1/4 cup soft butter or margarine

  • 1 egg

  • Combine these ingredients in a food processor.  Then use dough to line a 9 lightly greased inch round pie plate.  Poke some holes in the crust. 

  • Cook 10-12 mins and let cool. 

 

Spinach filling:

  • 1 large sack of spinach or at least 2 cups frozen spinach (2 packs)- boiled for a few minutes then drained of excess water.

  • 2 med onions  cut finely and cooked in a frying pan in 1-2 T olive oil.

  • 1 carton 1 % Cottage cheese

  • 11/2 cups light mozzarella or a mix of low fat cheddar and moz cheese

  • 11/2  T  flour

  • 1 t each of spices (garlic, basil, oregano, pepper, salt and thyme)

  • Fresh tomatoes sliced on top for decoration

Directions:

  1. Mix the cottage cheese, cooked onions and drained spinach together in a bowl.  Add 1/2 cup cheese.  Add flour and spices.  Combine well then spoon into cooled pie crust.  Spread remaining cheese on top.

  2. Bake in oven at 350 degrees for 30 mins.  Add tomatoes slices and cook another 10-15 mins.  

  3. Serve hot or cold with a large green salad.
