Crunchy Pepper Pea Salad

Nutrition Tip: To make this a complete meal, add chickpeas or edamame and serve with slices of whole grain baguette.
1 Red pepper, cut into strips
1 Yellow pepper, cut into strips
1 Orange pepper, cut into strips
1 cup Sugar snap peas (or snow peas)
1/2 English cucumber (or field cucumber)
1/2 cup Sesame seeds
Light coloured vinaigrette
Put all of the veggies in a bowl and toss with a simple vinaigrette of olive oil and apple cider vinegar (or lemon juice).
Sprinkle with sesame seeds.
