Hearty Pumpkin Muffins

Extra pumpkin puree? Use it to make these fibre rich and tasty muffins!

2-3 Servings 

Ingredients:

  • 1 cup pumpkin puree

  • 1 cup Medool dates cut up 

  • 1/4 c water

  • 1/4 c maple syrup 

  • 1 tsp salt

  • 1-2 tsp pumpkin spice 

  • 1 tsp cinnamon 

  • 1/2 t ginger 

  • 1 tsp vanilla 

  • 2 eggs

  • 1 cup quick-cooking oats

  • 1 cup oat flour 

  • 1 tsp baking soda

  • 1 tsp baking soda 


Instructions:

​Mix ingredients together. Cook at 350 degrees for 25 minutes.

Optional:  If desired, add nuts and top with pumpkin seeds and oats before baking.
